Buckwheat is neither a grass nor wheat, but is a fruit related to rhubarb and it was one of the first crops cultivated in the United States. Our Buckwheat honey is produced in New York. The Dutch colonists brought buckwheat to North America where they planted it along the Hudson River.

Characteristics

Buckwheat honey is a strong-flavored honey with an almost black color and red tint. Although it is not as sweet as other lighter colored honey, it has a somewhat woody scent and lingering aftertaste. Its dark color and strong taste are reminiscent of molasses, and it's a favorite in Europe. Darker honey contains higher levels of antioxidants and minerals which provide a defense against free radicals; boosting immunity and are said to help fight heart disease, cancer, and other maladies. Buckwheat honey contains about 796 milligrams per kilogram (as many as found in food produce like spinach, blueberries, apples, strawberries and oranges; according to researchers).  Buckwheat honey is also a great source of iron. Uses:
